We raise wonderfully flavored meat chickens on pasture. Our chickens have space - space to run, jump, flutter about, and get some "personal space" if they feel a little hen pecked. The birds eat lots of grass, hunt for grasshoppers and other bugs, take dust baths, and spread out under the santitizing sun - in short, our birds are raised like chickens, and leave a very chickeny life.
Our birds sell for $3.59/lb. The taste has been described as incredible, meaty, fantastic, - well, you get the point. More than one old timer's teared up after finally tasting chicken that, well actually tasted like chicken. The reason our birds taste like chickens? Because they have time to develop a real flavor - our birds live nearly twice as long as the industrial breed of choice - the Cornish Cross, but still stay remarkably tender. Plus, an older bird develops a thin layer of fat under its skin which renders during cooking, basting the meat in pure deliciousness.
Our birds are USDA inspected and slaughtered by hand at a small local processing plant. I personally supervise the killing and get feedback from the plant employees and USDA inspector. The greatest compliment I get is that my birds are the cleanest birds they've ever worked with.
